Ingredients
  

  • 1 cup butter 2 sticks, melted
  • 1 cup semisweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1 1/4 cups granulated sugar
  • 1 cup brown sugar packed
  • 1 tablespoon vanilla extract pure vanilla preferred
  • 3 large eggs room temperature
  • 1 1/4 cups all-purpose flour spooned and leveled
  • 1/2 teaspoon salt table salt or fine sea salt
  • 1/2 cup unsweetened cocoa powder natural cocoa
  • as needed vanilla ice cream and hot fudge sauce for serving

Method
 

  1. Preheat the oven to 350°F. Line a 9x9-inch baking pan with nonstick foil or parchment paper, leaving a little overhang on two sides. In a large microwave-safe bowl, combine the butter and semisweet chocolate chips. Microwave in 30-second bursts, stirring after each burst, until the mixture is completely melted and smooth. Let it cool for a couple of minutes.
  2. Whisk the granulated sugar, brown sugar, vanilla extract, and eggs into the melted chocolate mixture until well combined and glossy. Add the flour, salt, and cocoa powder, and stir just until no dry streaks remain. Fold in the milk chocolate chips.
  3. Pour the batter into the prepared pan and spread it evenly. Bake for 35 to 40 minutes, checking around the 35-minute mark. For fudgier, gooier brownies, pull them out at 35 minutes. For chewier brownies, continue baking until 40 to 42 minutes. The edges should be set and the center should look slightly soft.
  4. If serving warm, let the brownies rest for 5 to 10 minutes, then cut into 12 squares and serve with ice cream and hot fudge sauce. For the chewiest texture, cool completely in the pan before cutting. To warm individual squares, microwave them for about 20 seconds.

Notes

Use a metal 9x9-inch pan instead of glass for a gooier center and firmer edges.
For the fudgiest texture, underbake slightly and let the brownies cool completely before slicing so they set up properly.
Stir in 1 cup of mini marshmallows along with the milk chocolate chips for a s'mores-inspired twist.
Store leftover brownies in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.
To make ahead, prepare the batter, cover the pan, and refrigerate overnight. Bake straight from the fridge, adding 2 to 3 minutes to the cooking time.
For a less sweet brownie, swap the milk chocolate chips for dark chocolate chips and use unsalted butter so you can control the salt.
