Ingredients

For the cake
  • 12 ounces fresh strawberries stemmed and chopped (about 3 cups)
  • 2 cups plus 2 teaspoons granulated sugar
  • 2 cups all-purpose flour
  • 2 sticks unsalted butter for the cake batter
  • 2 large eggs lightly beaten
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
For the strawberry cream cheese frosting
  • 1 stick unsalted butter at room temperature
  • 8 ounces cream cheese at room temperature
  • 3 cups powdered sugar
  • 1/2 cup crushed strawberries from the macerated berry mixture
  • 2 teaspoons freshly squeezed lime juice
  • 1/4 teaspoon lime zest
  • 1 teaspoon vanilla extract

Method

Directions
  1. In a medium bowl, toss the chopped strawberries with 2 teaspoons of the sugar and 1/4 cup water. Let stand at room temperature for 1 hour until the berries release their juices and measure about 1 1/2 cups. Pulse the berry mixture in a blender or food processor on low speed just until chunky, not smooth. Reserve 1/2 cup of the crushed strawberries for the frosting; set the rest aside for the cake batter.
  2. Preheat the oven to 400 degrees F.
  3. In a large bowl, sift together the remaining 2 cups sugar and the all-purpose flour.
  4. Melt the 2 sticks of butter in a small saucepan over low heat. In another bowl, whisk the melted butter with the eggs, buttermilk, vanilla extract, and baking soda. Pour the liquid into the flour mixture and stir until just combined. Fold in 1 cup of the reserved crushed strawberries.
  5. Pour the batter into a greased 9x13-inch baking pan. Bake for 20 to 25 minutes, until a knife inserted into the center comes out clean.
  6. While the cake bakes, make the frosting: In a mixing bowl, beat the softened butter and cream cheese together until smooth. Gradually add the powdered sugar, beating until fully incorporated. Mix in the reserved 1/2 cup crushed strawberries, lime juice, lime zest, and vanilla extract.
  7. Let the cake cool completely on a wire rack, then spread the strawberry cream cheese frosting evenly over the top.

Notes

Use ripe, fragrant strawberries for the best flavor; if strawberries are out of season, frozen berries (thawed and well drained) can be substituted.
Don't over-pulse the strawberries; a little texture adds character to the cake.
Bring the butter, cream cheese, and eggs to room temperature before mixing for a smooth, lump-free batter and frosting.
For a classic Texas sheet cake twist, press 1/2 cup toasted chopped pecans onto the frosting while it is still slightly soft.
This cake actually tastes even better the next day, so it's a great make-ahead dessert.
Store the frosted cake covered in the refrigerator for up to 4 days; let it sit at room temperature for 20 minutes before serving.
If you don't have buttermilk, stir 1 1/2 teaspoons white vinegar into 1/2 cup whole milk and let stand for 5 minutes.
