Ingredients
  

  • 4 1-inch-thick top sirloin steaks
  • Kosher salt and freshly ground black pepper to taste
For the garlic parmesan fries
  • 2 russet potatoes scrubbed and cut into fries
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup freshly grated Parmesan cheese
  • Kosher salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 375°F. Lightly grease a large sheet pan with oil or coat with nonstick spray.
  2. On one side of the prepared pan, arrange the potato fries in a single layer. Drizzle with olive oil, add the minced garlic, Italian seasoning, and Parmesan. Season with salt and pepper. Toss gently to combine.
  3. Bake the fries for 20-25 minutes, tossing occasionally, until they are golden brown and crisp.
  4. Switch the oven to broil.
  5. Season the steaks generously with salt and pepper. Place them on the opposite side of the sheet pan, in a single layer.
  6. Broil the steaks for 4-5 minutes per side for medium-rare, or until they reach your desired doneness. Look for a browned, charred edge.
  7. Serve the steak and fries immediately, garnished with chopped parsley and garlic butter if desired.
