Ingredients
Method
- In a large serving bowl, combine the cubed watermelon, sliced cucumber, crumbled feta, and chopped mint.
- Drizzle the fresh lime juice over the top, then sprinkle with sea salt and black pepper.
- Very gently toss everything together with a large spoon or your hands, being careful not to break up the watermelon too much.
- Taste and adjust seasoning or lime juice as needed. Serve immediately, or chill for 15 minutes for a cooler salad.

Notes
For extra crunch, add a handful of toasted almonds or pistachios. This salad is best served fresh; leftovers can be stored in the fridge for up to 1 day but will release liquid. If making ahead, keep the dressing separate and toss just before serving. Use a block of feta instead of pre-crumbled for better texture. Season lightly at first, then adjust to taste—the feta adds saltiness. For a California twist, use Meyer lemon juice instead of lime.
