- Make the simple syrup: In a microwave-safe bowl, stir together the sugar and water. Microwave on high for about 90 seconds, then stir until the sugar is completely dissolved. Let the syrup cool in the refrigerator.
- Puree the strawberries: In a blender, combine the halved strawberries and fresh lemon juice. Blend until smooth and silky.
- Combine the base: Pour the coconut water into the blender with the strawberry-lemon puree. Add the cooled simple syrup to taste, blending briefly to mix. Adjust sweetness if needed.
- Chill and serve: Transfer the lemonade to a pitcher and refrigerate for at least 30 minutes to let the flavors meld. When ready to serve, fill glasses with crushed ice and pour the lemonade over the top.
- Optional finish: Garnish each glass with a fresh strawberry slice or a mint sprig. For a fizzy twist, top with a splash of sparkling water just before serving.

If you don't have Meyer lemons, regular lemons work fine—just add a touch more simple syrup if they're extra tart. For a sweeter drink, increase the simple syrup to 3/4 cup sugar and water. This lemonade keeps well in the fridge for up to 3 days; stir before serving. Avoid over-blending the strawberries, which can make the drink cloudy. For a boozy version, add a shot of vodka or rum per glass.
