Dressing
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 teaspoon granulated sugar
  • 1 teaspoon white vinegar or cider vinegar
  • 1 tablespoon fresh lime juice
  • salt to taste
  • black pepper to taste
Slaw
  • 1 pound coleslaw mix shredded cabbage and carrots
  • 1 small bunch scallions sliced
  • 1 Granny Smith apple cored and julienned
  • 1 red apple cored and julienned

Method
 

Make the Dressing
  1. In a small bowl, whisk together the mayonnaise, sour cream, sugar, vinegar, lime juice, and a pinch of salt and pepper until smooth. Taste and adjust with more sugar or vinegar if desired.
Prepare the Apples and Scallions
  1. Core the apples and cut them into thin matchsticks. Slice the scallions thinly, using both white and green parts.
Assemble the Slaw
  1. In a large bowl, combine the coleslaw mix, apples, and scallions. Pour the dressing over the top and toss until everything is evenly coated. Season with additional salt and pepper to taste.
Serve or Chill
  1. Serve the slaw immediately, or cover and refrigerate for a few hours to let the flavors meld. Stir again before serving.
