- Heat the oven to 350°F. Line a large, rimmed baking sheet with parchment paper.
- In a large bowl, stir together the superfine almond flour and thick Greek yogurt with a fork until a shaggy dough forms. Knead by hand or with a rubber spatula for 1 to 2 minutes, until the dough is firm, smooth, and not sticky. If necessary, add more almond flour 1 tablespoon at a time.
- Roll the dough into 20 mini balls, then coat each ball in everything bagel seasoning. Arrange them on the prepared pan, leaving a little space between each. Bake for 20 to 22 minutes, until pale golden and dry to the touch.
- Let the bagel bites cool completely on the baking sheet before serving or storing. Store in a paper bag on the counter for up to 5 days. If they become soft, reheat at 300°F for 5 minutes to crisp them back up.
