- Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish with cooking spray or a little oil.
- In a medium bowl, stir together the rolled oats, chopped pecans, cinnamon, ginger, and nutmeg. Add the melted coconut oil (or butter) and maple syrup, and mix until everything is well coated.
- Spread the sliced peaches evenly in the bottom of the prepared baking dish. Sprinkle the oat-pecan topping evenly over the peaches.
- Cover the dish with foil and bake for 20 minutes. Then, remove the foil and bake for another 10 minutes, until the topping is golden and the peaches are bubbling. Let cool slightly before serving.

For a nut-free version, replace pecans with an extra 1/4 cup of oats or sunflower seeds. Store any leftovers in the fridge for up to 3 days; reheat in the oven or microwave. This crisp can be assembled ahead of time and baked just before serving. Avoid overbaking to keep the topping crunchy. Serve warm with a scoop of vanilla ice cream or a dollop of coconut whipped cream.
