French Yogurt Cake (Gâteau au Yaourt): One Bowl, No Scales

This one-bowl French yogurt cake needs no scales. Bake it plain for vanilla, or finish it with a sunny Meyer lemon glaze for a California twist.

Ingredients
  

Cake
  • 1/2 cup plain whole milk yogurt 120 ml; plain, not Greek
  • 1 cup fine granulated sugar 200 g
  • 3 large eggs at room temperature
  • 1/2 cup light-flavor extra virgin olive oil 120 ml; Napa Valley olive oil or another mild olive oil
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour 190 g; spoon and level
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
For the Lemon Version Only
  • 1 lemon Meyer lemon zest about 1 tablespoon; California Meyer lemons are ideal
Lemon Glaze (Lemon Version Only)
  • 1/2 cup powdered sugar, sifted 60 g
  • 4 tablespoons fresh lemon juice 60 ml; from about 1 Meyer lemon

Method
 

Plain Vanilla Version
  1. Position a rack in the lower-middle of the oven and heat to 350°F (180°C). Butter and flour a 9 by 5 inch (22 by 12 cm) loaf pan, or line the bottom with parchment paper.
  2. In a large bowl, whisk the yogurt, sugar, and eggs until smooth, about 1 minute. Add the oil and vanilla and whisk until fully incorporated. The batter will be thick but pourable.
  3. Spoon the flour into a measuring cup and level it with a knife; do not scoop. Sift the flour, baking powder, and salt over the wet ingredients. Fold with a rubber spatula just until combined. Do not overmix.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 45 to 50 minutes, until the crust is deeply golden, the center has cracked, and a skewer inserted in the middle comes out clean.
  5. Cool the cake in the pan for 15 minutes, then turn it out onto a wire rack and cool completely before slicing.
Lemon Version
  1. For the lemon version, rub the Meyer lemon zest into the sugar with your fingers for 30 seconds before adding the yogurt and eggs; the sugar should look fragrant and slightly damp.
  2. Make the glaze by whisking the sifted powdered sugar and fresh lemon juice in a small bowl until smooth and pourable.
  3. As soon as the cake is out of the oven, poke the top all over with a thick skewer or chopstick. Slowly pour the glaze over the hot cake, letting it soak in. Cool 15 minutes in the pan, then turn the cake out.

Notes

The crack down the center is normal and desirable; it means the cake baked properly.
For an 8 inch (20 cm) round pan, bake for 30 to 35 minutes and check at 28 minutes. The top will not crack the same way.
Keep the cake in an airtight container at room temperature for 4 to 5 days.
Freeze the unglazed cake for up to 2 months and add the glaze after thawing.
Use 1 cup (200 g) sugar for restrained sweetness or 1 cup plus 1 1/2 tablespoons (220 g) for a more traditional French level.
If you want a thicker, whiter glaze, increase the powdered sugar to 2/3 cup (80 g).
For a neutral flavor, replace the olive oil with the same amount of vegetable oil.
