Ingredients
  

  • 1 pound Roma tomatoes, seeded and diced about 4 medium
  • 1/2 medium white onion, finely diced
  • 1 habanero pepper, stemmed, seeded, and minced wear gloves when handling
  • 1/2 cup fresh cilantro, chopped packed
  • 2 tablespoons fresh lime juice from about 1 lime
  • 1/2 teaspoon kosher salt or to taste
  • 1/8 teaspoon freshly ground black pepper

Method
 

  1. In a medium bowl, combine the diced tomatoes, diced onion, minced habanero, and chopped cilantro.
  2. Stir in the lime juice, salt, and black pepper. Taste and adjust seasoning if desired. Serve immediately or refrigerate overnight for deeper flavor.

Notes

For less heat, remove all seeds and membranes from the habanero, or use a milder pepper like jalapeño. If you prefer a smokier flavor, grill the tomatoes and onion before dicing. Store leftovers in an airtight container in the fridge for up to 3 days; drain excess liquid before serving. This salsa is excellent on fish tacos, grilled chicken, or as a topping for nachos. Avoid over-mixing to keep the texture chunky. Letting it sit for 30 minutes at room temperature allows the flavors to meld beautifully.
