Ingredients
  

  • 1 lb lean ground beef 90% lean
  • 2 cups elbow macaroni uncooked
  • 2 cups shredded cheddar cheese divided
  • 1 cup diced yellow onion about 1 medium
  • 2 cloves garlic minced
  • 14.5 oz canned diced tomatoes with their juices
  • 1 cup beef broth low sodium preferred
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 teaspoon Italian herbs dried

Method
 

  1. Preheat the oven to 350 degrees F.
  2. In a large skillet set over medium heat, cook the ground beef until no longer pink. Add the onion and garlic and sauté until the onion is softened and fragrant.
  3. Stir in the uncooked elbow macaroni, undrained diced tomatoes, and beef broth until everything is well combined.
  4. Season with salt, black pepper, and Italian herbs. Bring the mixture to a gentle simmer, then lower the heat to medium low.
  5. Fold in half of the shredded cheddar cheese until melted and creamy.
  6. Transfer the mixture to a greased oven-safe baking dish, sprinkle the remaining cheese over the top, and bake for 20 to 25 minutes, until hot, bubbly, and lightly golden.

Notes

To prevent mushy pasta, keep the macaroni slightly al dente before baking because it will continue cooking in the oven.
