Easy Sugar Cookies with a Zesty Lime Glaze

Ingredients
  

For the Cookies
  • 1/2 cup unsalted butter softened
  • 1 cup white granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 1 teaspoon lime juice
  • 1/2 teaspoon lime zest
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda
For the Glaze
  • 1 1/2 cups powdered (confectioners) sugar
  • 6 teaspoons lime juice about 2 tablespoons, plus more if needed
  • 1/2 teaspoon lime zest plus extra for garnish, optional
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 350°F. Line baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  3. Beat in the vanilla extract, egg, lime juice, and lime zest until well combined.
  4. Gradually stir in the flour, baking powder, salt, and baking soda until just incorporated. Avoid overmixing.
  5. Roll the dough into 1 inch balls and arrange them on the prepared baking sheets, spacing them a couple of inches apart.
  6. Bake for 9 to 10 minutes, or until the edges just start to turn golden.
  7. Take the cookies out of the oven and let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to finish cooling.
  8. While the cookies cool, whisk the powdered sugar, lime juice, lime zest, and vanilla in a small bowl until smooth. If the glaze is too thick, add a little extra lime juice or water; if too thin, whisk in more powdered sugar.
  9. Spoon about 1 teaspoon of glaze onto the center of each cookie and spread it evenly, or drizzle the glaze over the tops. Garnish with extra lime zest if you like.

Notes

For a stronger lime flavor, add an extra teaspoon of lime zest to the cookie dough.
If the dough is too sticky to roll, chill it in the refrigerator for 15 to 20 minutes before shaping.

Let the glaze set for about 30 minutes before stacking or storing the cookies.
