Ingredients
Method
- Preheat your oven to 400°F. Line a large baking sheet with parchment paper and set aside.
- In a small saucepan, combine the barbecue sauce, honey, and hot chili sauce. Simmer over low heat for 1-2 minutes, then remove from heat and set aside.
- In a large bowl, toss the sweet potato and potato chunks with olive oil, salt, pepper, dried herbs, garlic powder, breadcrumbs, and Parmesan cheese until evenly coated.
- Spread the seasoned potatoes on one side of the prepared baking sheet in a single layer.
- In the same bowl, toss the broccoli florets with olive oil, salt, and pepper until coated.
- Place the chicken breasts (or thighs) and broccoli on the other side of the baking sheet. Season the chicken with salt, pepper, and smoked paprika.
- Brush the chicken generously with the honey BBQ sauce.
- Bake for 25-30 minutes, until the vegetables are tender and the chicken is cooked through (internal temperature reaches 165°F).
- If the broccoli browns too quickly, cover it loosely with aluminum foil after the first 15 minutes.
- Switch the oven to broil and cook for 2-3 minutes more to caramelize the sauce and crisp the potatoes.
- Remove the pan from the oven. Brush the chicken with additional honey BBQ sauce if desired, and serve warm.

Notes
For extra flavor, marinate the chicken in the BBQ sauce for 30 minutes before cooking. Substitute sweet potatoes with regular potatoes if preferred. Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place in a 350°F oven for 10 minutes or microwave until hot. Avoid overcrowding the pan to ensure even roasting. Serve with a side of coleslaw or cornbread for a complete meal.
