Ingredients
  

  • 1 pound fresh peaches, peeled and diced about 2 large peaches
  • 1 large Roma tomato, diced
  • 1/2 small red onion, finely diced
  • 1/2 medium jalapeño, seeded and minced adjust to taste
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh lime juice from about 1 large lime
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper plus more to taste

Method
 

  1. In a medium mixing bowl, combine the diced peaches, tomato, red onion, minced jalapeño, and chopped cilantro.
  2. Drizzle the fresh lime juice over the mixture, then sprinkle with salt and black pepper. Stir gently until everything is well combined. Let the salsa rest for about 15 minutes at room temperature to allow the flavors to meld. Serve immediately or refrigerate.

Notes

For a milder salsa, remove all seeds and ribs from the jalapeño. To make it spicier, leave some seeds in or add a second jalapeño. This salsa is best enjoyed the same day but can be stored in an airtight container in the refrigerator for up to 2 days. If using canned peaches, be sure to drain them well and reduce salt slightly. Serve with tortilla chips, or spoon over grilled chicken, fish, or pork. For a twist, add diced avocado just before serving.
