Easy Boursin Pasta with Sun-Dried Tomatoes and Spinach

Ingredients
  

  • 1 jar (7 oz.) julienned sun-dried tomatoes packed in oil
  • 2 cups cherry tomatoes
  • 2 packages (5.2 oz. each) Boursin Garlic and Fine Herbs cheese
  • 12 oz. short pasta (such as penne or fusilli) uncooked
  • 2 cups fresh spinach packed
  • grated Parmesan cheese for serving

Method
 

  1. Preheat your oven to 400°F.
  2. In a 13x9-inch baking dish, stir together the sun-dried tomatoes (with their oil) and the cherry tomatoes. Push the tomatoes to the sides and place both rounds of Boursin cheese in the center.
  3. Bake until the cheese is softened and the tomatoes are blistered, about 20 minutes.
  4. Meanwhile, bring a large pot of salted water to a boil. Cook the pasta until al dente, then drain and set aside.
  5. Remove the baking dish from the oven and immediately stir the hot cheese together with the tomatoes and spinach until the spinach wilts.
  6. Add the drained pasta and stir until everything is well coated. Serve topped with grated Parmesan.

Notes

For extra richness, stir in a splash of pasta cooking water. Substitute kale for spinach if desired. Store leftovers in the fridge for up to 3 days. To make ahead, assemble the dish without baking and refrigerate; add 5 minutes to bake time. Do not overcook the pasta—it will continue to soften in the hot sauce.
