Ingredients
  

  • 10 oz rotini pasta (about 283 g)
  • 1 cup mayonnaise (240 ml)
  • 1/2 cup sour cream (120 ml)
  • 1 tablespoon taco seasoning
  • 1/2 tablespoon ranch seasoning mix
  • 1/2 cup sliced green onions (scallions)
  • 1 cup diced red bell pepper (about 1 medium)
  • 1 can (15 oz) corn kernels drained
  • 1 1/2 cups shredded Mexican cheese blend

Method
 

  1. Bring a large pot of salted water to a boil and cook the rotini according to package directions until al dente. Drain in a colander, rinse with cold water to cool quickly, and set aside.
  2. In a large mixing bowl, stir together the mayonnaise, sour cream, taco seasoning, and ranch seasoning until smooth and creamy. Add the cooled rotini and toss until every piece is coated in the dressing.
  3. Fold in the sliced green onions, diced red bell pepper, drained corn, and shredded Mexican cheese. Stir well, cover, and refrigerate for 1 to 2 hours before serving to allow the flavors to blend.

Notes

Use short, chunky pasta shapes like rotini, penne, or farfalle so the dressing clings to every bite.
