- Bring a large pot of generously salted water to a boil. Add the bowtie pasta and cook until al dente according to the package directions. Drain, rinse under cool running water until the pasta is chilled, and drain well. Set aside.
- In a large bowl, gently toss the cooled pasta with the romaine, creamy lemon Caesar dressing, Meyer lemon zest, shaved Parmesan, and sourdough croutons. Season with kosher salt and plenty of freshly cracked black pepper to taste, toss once more, and serve immediately.

Use a good-quality creamy Caesar dressing and add a little lemon zest to make the lemon flavor pop.
Add the croutons right before serving so they stay crunchy.
To make ahead, keep the dressing and croutons separate and toss just before serving.
Store leftovers in an airtight container in the fridge for up to 2 days; the romaine will soften over time.
For a heartier dish, top with grilled chicken, shrimp, or white beans.

If you prefer a lighter version, use half the dressing and add a splash of fresh lemon juice at the table.
