  • 1 1/4 cups powdered sugar sifted if lumpy
  • 8 ounces frozen whipped topping thawed
  • 3 ounces peach-flavored gelatin mix 1 standard box
  • 30.5 ounces canned sliced peaches in light syrup drained and diced into bite-size pieces
  • 2 1/2 cups miniature marshmallows
  • 1/2 cup chopped pecans finely chopped, plus extra for garnish if desired

Method
 

  1. In a medium mixing bowl, use a handheld electric mixer on medium-high speed to blend the softened cream cheese and powdered sugar for 1 1/2 to 2 minutes, scraping down the sides, until the mixture is completely smooth and free of lumps.
  2. Add the thawed whipped topping and peach-flavored gelatin mix to the cream cheese mixture. Whisk or beat gently on low speed until everything is fully combined and no dry streaks of gelatin remain.
  3. Using a spatula, carefully fold in the drained diced peaches and mini marshmallows until evenly distributed. Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 2 hours, or up to overnight for a firmer texture.
  4. Just before serving, gently fold in the chopped pecans. Transfer the chilled dessert to a serving bowl or individual dishes, sprinkle with extra pecans if desired, and serve cold.

Notes
