Method
Cook the Rice
- In a medium saucepan, bring 1 1/2 cups water to a boil. Add the basmati rice, reduce heat to low, cover, and simmer for 15 minutes, or until tender. Remove from heat and let stand covered for 5 minutes, then fluff with a fork.
Make the Curry
- Season the chicken pieces with 1 teaspoon salt and 1/2 teaspoon pepper.
- Heat the olive oil in a large Dutch oven or heavy pot over medium heat. Add the chicken and shallot, and cook, stirring occasionally, until the chicken is browned on all sides, about 6 to 8 minutes.
- Stir in the tomato paste, red curry paste, garlic, and ginger. Cook until fragrant, about 2 minutes.
- Pour in the coconut milk and chicken stock, and season with a pinch of salt and pepper. Bring to a gentle boil, then reduce the heat and simmer until the sauce thickens slightly, about 7 to 10 minutes.
- Add the bell pepper strips and diced peach. Continue to simmer until the peppers are tender, about 5 to 8 minutes.
- Remove from heat and stir in the cilantro, Thai basil, and lime juice. Adjust seasoning with salt and pepper if needed.
- Serve the curry warm over the cooked rice.

Notes
For extra creaminess, use full-fat coconut milk. Light coconut milk works but yields a thinner sauce.
Substitute chicken thighs with boneless breasts or even cubed tofu for a vegetarian version.
Peach adds natural sweetness; if out of season, use canned peaches (drained) or a ripe mango.
To make the curry thicker, simmer for an additional 5 to 10 minutes, stirring occasionally.
Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently on the stovetop.
