Ingredients
  

For the Pumpkin Cake
  • 1 cup cup granulated sugar
  • 3/4 cup cup all-purpose flour
  • 1 teaspoon teaspoon baking soda
  • 1 teaspoon teaspoon pumpkin pie spice
  • 1/4 teaspoon teaspoon kosher salt
  • 3 large eggs room temperature
  • 2/3 cup cup unsweetened pumpkin puree canned or fresh
  • 1 teaspoon teaspoon vanilla extract
  • as needed powdered sugar for dusting
For the Cream Cheese Filling
  • 3 cups cup powdered sugar sifted if lumpy
  • 8 ounces ounce cream cheese softened
  • 4 tablespoons tablespoon unsalted butter softened
  • 2 tablespoons tablespoon heavy cream or heavy whipping cream
  • 1 teaspoon teaspoon vanilla extract

Method
 

  1. Preheat your oven to 375°F. Coat an 18x13-inch rimmed half-sheet pan with nonstick cooking spray, then line it with parchment paper, pressing the paper into the corners.
  2. In a large bowl, whisk together the granulated sugar, all-purpose flour, baking soda, pumpkin pie spice, and kosher salt. Add the eggs, pumpkin puree, and vanilla extract, and stir just until the batter is smooth and no dry streaks remain.
  3. Pour the batter into the prepared sheet pan and use an offset spatula to spread it into an even layer, reaching the edges.
  4. Bake for 12 to 15 minutes, until the top springs back when gently pressed and is no longer sticky.
  5. While the cake is baking, lay a clean, lint-free kitchen towel on a flat surface and sprinkle it generously with powdered sugar.
  6. Immediately after baking, invert the hot cake onto the prepared towel and carefully peel off the parchment paper.
  7. Starting from a short side, use the towel to roll the cake tightly into a log. Let it cool completely while still wrapped in the towel, about 60 minutes.
  8. In a medium bowl, beat the powdered sugar, softened cream cheese, softened butter, heavy cream, and vanilla extract with an electric mixer until smooth and well combined.
  9. Carefully unroll the cooled cake. Spread the cream cheese filling evenly over the top, leaving a 1/2 to 1 inch border uncovered around the edges.
  10. Roll the cake back up tightly without the towel, and place it seam-side down on a serving platter. Cover with plastic wrap and refrigerate for at least 1 hour before serving. When ready, unwrap, dust with powdered sugar, slice, and serve.

Notes

For best results, roll the cake while it is still hot; this prevents cracking.
Use room-temperature cream cheese and butter for a silky, lump-free filling.
If the filling is too thin, beat in a little more powdered sugar; if too thick, add a splash of heavy cream.
For picture-perfect slices, trim about 1/2 inch off each end before serving.
Wrap the finished pumpkin roll tightly in plastic and refrigerate for up to 4 days, or freeze for 2 to 3 months.
No pumpkin pie spice? Substitute 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, and a pinch of nutmeg.
This roll can be made a day ahead and chilled overnight before serving.
