- In a mixing bowl, combine ground chicken, salt, pepper, oregano, beaten egg, and panko. Mix gently until just combined; do not overwork. Shape into 4 equal patties, about 3/4 inch thick. Refrigerate for at least 1 hour (or up to 24 hours) to firm up.
- Preheat your gas or charcoal grill to medium-high heat, around 350-375°F. Grill the patties for 4-5 minutes per side, until golden brown and cooked through (internal temp 165°F). During the last minute of cooking, top each patty with a slice of cheese and close the grill lid to melt.
- If desired, toast the buns on the grill over indirect heat for about 1 minute, until lightly golden. Place each patty with melted cheese on a bun bottom.
- Top each burger with a fresh basil leaf and a tomato slice. Close with the bun top and serve immediately.

Notes
For extra flavor, add a slice of ripe California avocado. These patties can be made a day ahead and kept chilled. If you don't have Sargento blend, use provolone or fresh mozzarella. Avoid pressing down on patties while grilling to keep them juicy. Serve with a side of grilled zucchini or a simple green salad.
