Prep

Cook Chicken
- Bring the soup to a gentle boil, then reduce the heat to maintain a low simmer. Cook until the chicken is cooked through and tender, about 15 to 20 minutes. Remove the chicken to a cutting board and shred with two forks. Return the shredded chicken to the pot.
Add Cheeses
- Reduce the heat to low. Add the softened cream cheese and stir until fully incorporated and smooth. Gradually add the shredded cheddar and Monterey Jack, stirring constantly until the cheese is melted and the soup is creamy.
Season and Serve
- Taste the soup and adjust seasoning with additional salt, pepper, or hot sauce if desired. Ladle into bowls and serve hot, garnished with optional toppings like sliced avocado, chopped cilantro, or tortilla chips.

Shred cheese from a block rather than using pre-shredded—it melts much smoother and tastes better. If you want more heat, substitute the Monterey Jack with a spicy cheese like habanero cheddar. To make this in a slow cooker, add all ingredients except the corn, black beans, and cheeses; cook on low for 6 hours, then shred the chicken, stir in the corn, beans, and cheeses, and serve. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months; reheat gently to avoid curdling.
