Ingredients
  

For the Sloppy Joe Filling
  • 1 lb ground beef 80/20 or leaner
  • 3/4 cup ketchup
  • 1/4 cup water
  • 3 teaspoons brown sugar packed
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons yellow mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
For the Casserole
  • 12 oz refrigerated buttermilk biscuits such as Pillsbury Grands! Biscuits, cut into quarters
  • 1 cup shredded sharp cheddar cheese about 4 oz

Method
 

Prepare the Filling
  1. Preheat your oven to 350 degrees F. Lightly coat a 9x13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, cook the ground beef, breaking it apart with a spoon, until it is no longer pink, about 6 to 8 minutes. Drain off any excess fat.
  3. Stir in the ketchup, water, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder, and salt. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally. Remove the skillet from the heat.
Assemble and Bake
  1. Transfer the meat mixture to a large bowl. Add the quartered biscuit pieces and gently toss until the biscuits are evenly coated with the sauce.
  2. Pour the biscuit and meat mixture into the prepared baking dish, spreading it into an even layer. Sprinkle the shredded cheddar cheese over the top.
  3. Bake for 28 to 30 minutes, until the biscuits are puffed and golden brown and the casserole is bubbly around the edges. Let it rest for 5 minutes before serving.

Notes

Substitute ground turkey or chicken for a lighter version. For extra flavor, add 1/4 cup diced onion and 1/4 cup diced green bell pepper while browning the beef. Leftovers keep well in the fridge for up to 3 days; reheat in the oven or microwave. To make ahead, prepare the filling a day in advance, then combine with biscuits and bake just before serving.
