Ingredients
  

For the Salmon Patties
  • 1 lb salmon, finely chopped
  • 1/2 cup breadcrumbs (preferably sourdough)
  • 2 large eggs, beaten
  • 2 tbsp fresh lemon juice (from California Meyer lemons)
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp sea salt
  • 1/4 tsp black pepper, freshly ground
  • 2 tbsp California olive oil for frying
For the Creamy Lemon Garlic Sauce
  • 1/2 cup mayonnaise
  • 2 tbsp fresh lemon juice (from California Meyer lemons)
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • salt and pepper to taste

Method
 

Prepare the Patties
  1. In a large bowl, combine the finely chopped salmon, breadcrumbs, beaten eggs, lemon juice, minced garlic, chopped parsley, salt, and pepper. Mix gently but thoroughly until everything is well incorporated.
  2. Shape the mixture into 8 equal patties, each about 1/2 inch thick. Place them on a plate or baking sheet.
  3. In a large skillet, heat the olive oil over medium heat. Carefully add the patties and cook for 3 to 4 minutes per side, until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.
Make the Sauce and Serve
  1. In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, and chopped parsley. Season with salt and pepper to taste.
  2. Serve the warm salmon patties drizzled with the creamy lemon garlic sauce. Enjoy immediately.

Notes
