Ingredients
  

  • 3 ripe peaches, thinly sliced
  • 2 balls burrata cheese (about 4 oz each)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves
  • 2 cups arugula or mixed greens
  • 2 tablespoons extra virgin olive oil (California-grown preferred)
  • 1 tablespoon balsamic glaze
  • salt and pepper to taste

Method
 

  1. Rinse the ripe peaches and slice them into thin wedges.
  2. Cut the cherry tomatoes in half.
  3. Wash and thoroughly dry the arugula and basil leaves.
  4. In a large serving bowl, toss together the arugula, sliced peaches, and halved cherry tomatoes.
  5. Gently place the burrata balls on top of the salad mixture.
  6. Drizzle everything with the extra virgin olive oil and balsamic glaze.
  7. Season with a pinch of salt and a few cracks of black pepper.
  8. Scatter the fresh basil leaves over the top and serve right away for best flavor.

For the best flavor, use peaches that are ripe but still firm so they hold their shape. If you can't find burrata, fresh mozzarella is a good substitute, though it's less creamy.
