California Mango Dragon Fruit Refresher

Ingredients
  

  • 2 cups water
  • 2 green tea bags
  • 1 ripe mango peeled and diced
  • 1 dragon fruit peeled and diced
  • 1/2 cup sugar or honey adjust to taste
  • ice cubes as needed
  • fresh mint leaves for garnish

Method
 

  1. Bring the water to a boil, then steep the green tea bags for about 5 minutes. Remove the bags and let the tea cool to room temperature.
  2. In a blender, combine the diced mango, diced dragon fruit, and sugar or honey. Blend until the mixture is smooth.
  3. Fill two glasses halfway with ice cubes.
  4. Divide the blended fruit mixture evenly between the glasses, pouring it over the ice. Then slowly add the cooled green tea until each glass is full.
  5. Use a spoon to gently stir the drink just a little, creating a layered color effect.
  6. Garnish each glass with fresh mint leaves and serve immediately.

Notes

For a less sweet version, use only 1/4 cup sugar or honey. You can substitute agave nectar for a different flavor. If dragon fruit is unavailable, use extra mango or frozen berries. This refresher is best served right away; the fruit layers will blend if stored. Chill the green tea beforehand for an extra cold drink.
