  • 1 cup cream cheese softened
  • 1 cup shredded cheddar cheese sharp or mild
  • 1/2 cup diced jalapeños fresh or pickled, seeds removed for less heat
  • 1/2 cup panko breadcrumbs or regular breadcrumbs
  • 1/4 cup chopped green onions green and white parts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt to taste
  • black pepper to taste

Method
 

  1. Preheat your oven to 375°F. Lightly grease a 9x13-inch baking dish.
  2. In a medium bowl, mix together the softened cream cheese, shredded cheddar, diced jalapeños, green onions, garlic powder, onion powder, and a pinch of salt and pepper until well combined.
  3. Arrange the chicken breasts in the prepared baking dish in a single layer. Spoon the cheese mixture evenly over each chicken breast, spreading it to cover the top.
  4. Sprinkle the breadcrumbs over the cheese topping, pressing gently so they stick.
  5. Bake for 25 to 30 minutes, until the chicken is cooked through (internal temperature reaches 165°F) and the topping is golden and bubbly.
  6. Let the dish rest for 5 minutes before serving. Garnish with extra green onions if desired.
