Ingredients
  

  • 8 oz ounces rotini pasta
  • 1 cup cup cherry tomatoes halved
  • 1 cup cup cucumber diced
  • 1/2 cup cup red onion finely chopped
  • 1/2 cup cup sliced black olives
  • 1 cup cup mozzarella cheese cubed
  • 1/2 cup cup Italian dressing
  • 1/4 cup cup chopped fresh flat-leaf parsley
  • to taste salt and freshly cracked black pepper

Method
 

  1. Bring a large pot of salted water to a rolling boil. Cook the rotini until al dente, then drain and rinse under cool water to stop the cooking.
  2. In a large bowl, toss together the cooled pasta, halved cherry tomatoes, diced cucumber, chopped red onion, sliced black olives, and cubed mozzarella.
  3. Pour the Italian dressing over the pasta mixture and toss gently until everything is evenly coated.
  4. Add the chopped parsley, salt, and freshly cracked black pepper, and stir to combine.
  5. Cover and refrigerate for at least 30 minutes before serving so the flavors can meld together.
