Ingredients
  

  • 1 loaf French bread (about 18 inches) or use a San Francisco-style sourdough for extra flavor
  • 3/4 cup BBQ sauce plus 2 tablespoons reserved for drizzling
  • 2 cups shredded mozzarella cheese about 8 ounces
  • 1 cup cooked shredded chicken rotisserie chicken works great
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons fresh cilantro leaves roughly chopped

Method
 

  1. Preheat your oven to 400°F.
  2. Slice the French bread loaf in half lengthwise (hot dog style) and place both halves cut-side up on a baking sheet.
  3. Spread 3/4 cup of BBQ sauce evenly over the cut sides of both bread halves, reserving 2 tablespoons for later.
  4. Sprinkle about 1 1/2 cups of the shredded mozzarella evenly over the sauced bread.
  5. Distribute the shredded chicken and sliced red onion evenly over both halves.
  6. Top with the remaining 1/2 cup of mozzarella cheese.
  7. Bake for 12 to 17 minutes, until the cheese is fully melted and beginning to turn golden brown.
  8. Remove from the oven and let the pizza rest for 2 minutes.
  9. Drizzle the reserved 2 tablespoons of BBQ sauce over the top and sprinkle with fresh cilantro.
  10. Slice into pieces and serve warm.
