Method
 

  1. Preheat your oven to 400°F. In a wide, shallow dish, stir together the breadcrumbs, Parmesan, garlic powder, salt, pepper, and paprika until well combined. Set aside.
  2. Using a sharp knife, split each chicken breast horizontally into two even fillets. Place the fillets between two sheets of plastic wrap and gently pound them to an even thickness of about 3/8 inch using a meat mallet or rolling pin.
  3. Spread a thin layer of mayonnaise on both sides of each chicken fillet. Dredge each piece in the breadcrumb mixture, pressing lightly to adhere. Arrange the coated chicken on a baking sheet lined with parchment paper or lightly greased with cooking spray. Bake for 17 to 20 minutes, until the chicken is cooked through and the coating is golden brown and crispy.
